Serious Chocolate Recipe :D

Made this myself last week, still haev a few pieces of the patty cake left, but I ate all the chocolate tulips I'm afraid mmmnh..yummah 8)
White & Dark Chocolate Patty Cake w Chocolate Tulips
Chop up white and dark semi sweet chocolate. Melt dark chocolate first, cutting in a stick of softened, unsalted butter. Then repeat this step with the white chocolate. (Unsure of how many ounces of each chocolate but assuming 8).
Pan Prep:
2 equal sized round pans. Grease lightly with butter, and set piece of wax or parchment paper inside (Makes removal of cake from pan onto rack much easier.) Preheat oven at 325 f.
Cake:
1/2 cup of sifted flour, sift it onto medium sized piece of wax or parchment paper.
10 egg yolks in a mixing bowl. Mix on regular speed of electrical cake beater for 10 minutes. To make the appropriate ribbon, a way to tell that your egg yolks are done right, by mixing on high speed for another 2-3 minutes. Then mix yet again slowly, on low speed, for only a few seconds.
Then take 6 of the 10 separated egg whites for about 2-5 minutes, depending on consistency of eggs. You want to form stiff peaks. While doing that add slowly a quarter cup of sugar.
After the egg whites and sugar have formed and are well mixed, remove from mixer, and replace with bowl of egg yolk mix. Add the white chocolate to the yolk egg mix, and mix on low speed for a few minutes till its well mixed.Then remove bowl of yolk mixture and set it on your work area/counter top, and then slowly add & fold the sifted flour mix. Then crape in the egg whites mix, turn and fold a couple times, and then pour into your pans, equal amounts of the mixture in both.
Bake for about 26-28 minutes, or until toothpick comes out clean and dry.
Chocolate Tulips:
Take about 6-8 balloons, inflate then only to the point where the bottoms are nice and round, but only about 4-5 inches around (Tape measure ppl) Then take your melted dark chocolate, place it over the pan you melted it over, turn the heat on very low, and stir the chocolate for only a minute or so. Then take a balloon one by one, and set the bottom into the bowl of melted dark chocolate. Rock the balloon back and forth, then side to side, for a decorative look that resembles tulips. Set them on 12x6 or 14x8 backing sheet, and stick in fridge for 30 minutes.
After removing cakes from oven, letting them cool for 30 minutes, and turning over onto a rack, or pad, and letting them cool for another 15 minutes, Take 8 ounces of pureed frozen rasberries, and pour them on top of bottom layer, spreading the pure' around with scraper. Place top layer on top, then repeat the process. then take 11/2 to 2 cups of fresh rasberries and place them on top. Add the chocolate tulips to plates, and place a few rasberries in them. Your set! Should serve 6-8 people.
